Mexican Grill! 

An entire meal Influenced from the small Mexican beach town of Bucerias!  We start with flattening then marinating chicken with Achiote Paste, the secret behind beautiful colour on your chicken (feel free to do this 1 day ahead of time!).   Paired with simple blender salsas, fresh slaw, rice and quick & easy flour tortillas, this is a family meal we grill up all summer long!

Annatto & Citrus Marinated Grilled Chicken 
Two Seasonal Salsas
Homemade Tortillas
Mexican Rice 
Fresh Cabbage Slaw 

Key Ingredients: whole chicken or pieces,  Achiote paste tomatillos guajillo chiles chipotle in adobo cilantro, orange, lime, cabbage, flour, rice.
