Mardi Gras: New Orleans Cajun Cuisine 

Cajun cuisine has a unique blend of flavours with influences from France, Spain, Africa, and Native American culinary traditions.  Cajun cuisine is deeply rooted in the cultural traditions of the Cajun people, and places a strong emphasis on hospitality and social gatherings. Eating together is always intertwined with community and celebration, creating a positive and enjoyable dining experience.  All that being said, Cajun cuisine has a certain adaptability that allows for creativity and innovation in the kitchen. Chefs often put their own spin on traditional dishes, keeping the cuisine fresh and exciting.

Our recipe for blackened chicken has a smoky, spicy crust that results in chicken that is super juicy.  You'll be dipping it in our 'old bay' remoulade, which balances out the whole plate.  And if this is your first go at collard greens, it will not be your last!  Let's celebrate Mardi Gras together!

Blackened Chicken 
Braised Collard Greens

Old Bay Remoulade
Buttermilk Biscuits

"...our family gathered did the class while watching your video. It was fantastic! We could pause the video when we needed a little extra time and then continue cooking. Our grown children got into the cooking and so did our 7 year old grandson. When we were sitting down enjoying our meal, everyone agreed that it was definitely a high end restaurant experience! The meat was very tender and juicy and the spice mixture was just right!
