Slow cooked, deeply seasoned beef piled onto a crusty bun, dipped in its own rich braising juices and topped with homemade giardiniera. It is messy, it is bold and it is absolutely worth it.
In this class, Jody and Kirstie take you inside this Chicago classic, teaching you the techniques behind building a deeply flavoured braising liquid, how to cook your beef so it is tender enough to melt into the sandwich, and how to finish it properly with a proper dip.
The real star of the show might just be the giardiniera, the tangy, spiced pickled vegetable condiment that takes this sandwich to another level entirely. You will make it from scratch and you will never buy jarred again, and likely have leftovers for the next week!
