This online cooking class brings together our favourite discoveries from a recent research trip—dishes that surprised and impressed us with their simplicity, bold flavours, and unforgettable textures.

We’ll start with Aguachile, a spicy, citrus-marinated shrimp dish that’s ceviche’s fiery cousin—cool, bright, and full of punch. You’ll learn to fry your own tortilla chips for the ultimate crunchy bite.

Then it’s time to tackle Tacos Vampiro—a crispy, cheesy taco grilled until golden and loaded with juicy chicken and fresh salsa. These were a total standout for us, and they’ve been on repeat ever since.

Don’t underestimate the rice and beans. This humble side was one of the most flavourful parts of the meal, and we’ll show you exactly why.
