Retro CREAMY Caesar Salad

The creamy classic version of a Caesar!  

 

1 large head romaine lettuce, cleaned and torn

2 (or more) cloves of garlic

½ tsp kosher salt

fresh cracked black pepper

1 tbsp Dijon mustard

1 egg yolk

dashes Tabasco sauce

1 tsp anchovy paste

dash L&P sauce

2 tbsp red wine vinegar

½ cup canola or olive oil

Juice from about ½ lemon

½ cup Parmiggiano Reggiano, shaved with a vegetable peeler

  • With a fork, smash garlic with salt in a large bowl, preferably wooden

  • Add pepper, Dijon mustard, egg yolk, Tabasco, L&P, anchovy paste and red wine vinegar

  • Whisk together, then slowly add oil, beginning with a few drops and then in a slow, steady stream

  • Season with salt and pepper, if needed and fresh lemon juice

  • Toss with romaine lettuce, divide among 6 plates and top with shaved cheese
