The pastry is where Jody and Kirstie will spend real time. Flaky pastry intimidates most home bakers because the margin for error feels narrow. You will learn why fat temperature matters, how to handle the dough so it stays tender, and how to line a tart shell properly so it holds its shape through the bake. Once you understand the technique, every pie and tart you make for the rest of your life gets easier.
The filling is a lesson in precision and patience. A classic runny butter tart filling is deceptively simple and surprisingly easy to get wrong. You will learn the ratio that produces the right consistency, how the filling sets as it cools, and why pulling the tarts at exactly the right moment is the difference between a perfect wobble and a soggy bottom. The raisins are always optional!
