Mardi Gras: New Orleans Cajun Cuisine

All that being said, Cajun cuisine has a certain adaptability that allows for creativity and innovation in the kitchen. Chefs often put their own spin on traditional dishes, keeping the cuisine fresh and exciting.
Our recipe for blackened chicken has a smoky, spicy crust that results in chicken that is super juicy. You'll be dipping it in our 'old bay' remoulade, which balances out the whole plate. And if this is your first go at collard greens, it will not be your last! Let's celebrate Mardi Gras together!
