The Elements of the Sandwich:
Citrus Garlic Butter Baguette
Citrus Marinated Porkloin
Orange-glazed Caramelized Onions
Aged Cheddar Cheese
2 demi baguettes
Citrus Marinated Pork Tenderloin
Citrus Marinade:
Zest from 1 lemon, lime & orange
1 tsp smoked paprika
1 tsp mustard powder
1 tsp sumac
½ tsp kosher salt
¼ tsp sugar
1 Tbsp fresh lemon juice
1 Tbsp fresh orange juice
1 tsp fresh lime juice
3 Tbsp olive oil
2 pork tenderloin ( We get ours from ForeQuarter Butcher Shop)

In a small heat proof dish, mix together the smoked paprika, sumac and mustard powder. Pour 2 Tbsp of boiling water over spices and allow to bloom. Stir in salt and sugar.

Add zest from lemon, lime and orange along with olive oil.

Cut pork tenderloin in half lengthwise (in the middle)

Season pork with kosher salt (1 tsp kosher salt per pound) Drizzle and rub in marinade.

In an oven-proof pan, Season marinated pork loin on all sides. (approximately 2 ½ minutes)

Finish cooking in 425F oven, approximately 8-9 minutes. Allow to rest (to redistribute juices) before slicing.
Citrus-Garlic Butter
1 clove garlic, minced
1 tsp chopped thyme (approx 1-2 sprigs)
Zest from half lemon
1 tsp lemon juice
2 tsp lime juice
Generous pinch kosher salt (approx ¼ tsp)
¼ lb softened unsalted butter
Bringing the sandwich

Cut baguette in half, spread both sides with Citrus-garlic butter. Top with sliced pork loin, caramelized onion, shredded aged cheddar.

Place the sandwich in the oven safe pan/ baking sheet and bake until cheese is melted.
