Crunchy, Nutty Granola!

Ingredients

  • 4 egg whites, whipped until foamy
  • ½ cup maple syrup
  • 2 ½ cups gluten-free oats (or regular oats)
  • 1 cup slivered almonds
  • ½ cup chopped pecans
  • ¾ cup hemp seeds
  • 1 cup sunflower or pumpkin seeds
  • 1 cup coconut strips
  • ½ cup chia seeds
  • ½ cup dried cranberries
  • 2 tbsp olive oil
  • 1 tsp flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, whisk the egg whites until foamy, then stir in the maple syrup.
  3. Add the oats, almonds, pecans, hemp seeds, sunflower seeds, coconut, and chia seeds. Use a spatula to mix well, coating everything.
  4. Spread the granola mixture evenly onto the prepared baking sheet. Drizzle with olive oil and sprinkle with flaky sea salt.
  5. Bake for 15 minutes, then add dried cranberries and bake for an additional 5 minutes, or until the granola is golden and crisp.
  6. Allow the granola to cool completely before storing in an airtight container.
